{"id":63889,"date":"2022-06-09T16:20:02","date_gmt":"2022-06-09T14:20:02","guid":{"rendered":"https:\/\/visitsicily.inera.it\/ricetta\/cannoli-sicilianos\/"},"modified":"2022-06-09T16:32:57","modified_gmt":"2022-06-09T14:32:57","slug":"cannoli-sicilianos","status":"publish","type":"ricetta","link":"https:\/\/visitsicily.inera.it\/es\/ricetta\/cannoli-sicilianos\/","title":{"rendered":"Cannoli sicilianos"},"content":{"rendered":"<p>Ingredientes para las obleas de 4-6 cannoli<\/p>\n<p>:<\/p>\n<ul>\n<li>150 g de harina 00<\/li>\n<li>50 g de az\u00facar granulado<\/li>\n<li>25 g de manteca<\/li>\n<li>10 g de cacao en polvo<\/li>\n<li>1 huevo<\/li>\n<li>1 cucharada de marsala o vino blanco<\/li>\n<li>aceite de oliva virgen extra.<\/li>\n<\/ul>\n<p>para el relleno:<\/p>\n<ul>\n<li>500 g de ricota de oveja<\/li>\n<li>150 g de az\u00facar<\/li>\n<li>extracto de vainilla<\/li>\n<li>chocolate negro<\/li>\n<li>piel de naranja confitada<\/li>\n<li>pistachos picados<\/li>\n<\/ul>\n<p>Preparaci\u00f3n de las obleas: poner todos los ingredientes en un bol y mezclarlos a\u00f1adiendo un poco de vino o vinagre hasta que la masa adquiera la consistencia de la pasta al huevo. Dejar reposar la masa tapada con un pa\u00f1o durante aprox. media hora y despu\u00e9s estirarla con un rodillo o con una laminadora de pasta al huevo hasta obtener unas l\u00e1minas muy finas. Con estas l\u00e1minas de pasta, crear formas ovaladas a mano o con ayuda de plantillas hechas con papel para uso alimentario. Envolver las formas obtenidas en unos tubos especiales de lat\u00f3n superponiendo los bordes de la masa unos mil\u00edmetros y pint\u00e1ndolos con la clara de huevo restante, ligeramente batida, para fijarlos y evitar que se abran durante la cocci\u00f3n. Antiguamente, se utilizaban trozos de ca\u00f1a como moldes, de ah\u00ed el nombre de los dulces. Fre\u00edr en manteca de cerdo o aceite de oliva muy caliente. Dejar que se sequen y enfr\u00eden. Retirar con cuidado los tubos de lat\u00f3n. Existe otra variante de cannoli en la que se a\u00f1ade cacao a la masa para darle un color m\u00e1s oscuro sin afectar al sabor.<\/p>\n<p>Preparaci\u00f3n del relleno: pasar el ricota al tamiz de malla muy fina. No es recomendable utilizar batidor de varillas el\u00e9ctrico o mezcladora ya que romper\u00edan la fibra del ricota y lo licuar\u00edan en exceso para este prop\u00f3sito. A\u00f1adir el extracto de vainilla, las escamas de chocolate y el az\u00facar.
